ODE IN SHALDON, DEVON, HAS BEEN NAMED THE
UK'S MOST SUSTAINABLE RESTAURANT
BY THE SUSTAINABLE RESTAURANT ASSOCIATION (SRA).
The SRA's inaugural national awards, announced at London's Cinnamon Club, recognised restaurants across seven categories covering all aspects of sustainability. All restaurants having undertaken the SRA's star rating in 2011 were considered for the awards, comprising more than 400 outlets nationwide, ranging from fine-dining establishments to neighbourhood restaurants.
ODE won the overall award for the most sustainable restaurant of the year, beating River Cottage and Le Manoir aux Quat'Saisons.
The SRA praised chef-proprietor Tim Bouget's huge commitment to sourcing local and seasonal, high-welfare food, with a high regard for energy and water efficiency and waste management, as well as a real dedication to treating staff fairly and engaging with their local community. Bouget said: "As a small, family-run restaurant we are very honoured to have received the Sustainable Restaurant of the Year award. Since opening Ode in 2007 our principles were that the entire business worked in tune with the environment and that formed the basis for our eco ethos and organic policies."
Mark Linehan, SRA managing director, said: "Every one of these restaurants is a really worthy winner. They are seven very different restaurants, from Scottish chippy the Bay, to the Michelin-starred Le Manoir aux Quat'Saisons, and Ode in rural Devon, proving that dining out sustainably is not the preserve of the rich or the London elite. With the dedication shown by these restaurateurs, anyone can run a successful hospitality business in a sustainable way - precisely what diners want."

ODE HAS JUST BEEN AWARDED THEIR 3 STAR SUSTAINABLILITY CHAMPION RATING , WITH 88%, GAINING THE HIGHEST SCORE SO FAR. (SEPTEMBER 2011)

Four hundred restaurants across the UK, including major groups, independent favourites and fine dining establishments will have put their sustainability credentials to the test by the end of 2011.
The SRA Star Rating system is fast becoming the industry standard and will be included in a number of restaurant guides like Top Table from later this year. Already The Times critic Giles Coren includes an SRA sustainability rating as part of his restaurant reviews. The Sunday Times recently dubbed it the "Michelin Stars of Sustainability".
To be an SRA Sustainability Champion, restaurants provide answers and evidence to 70 questions across 14 areas of sustainability. The survey gauges whether a restaurant is serving local, seasonal, high welfare food, how the resources and waste are managed, as well as how the staff are treated, the customers respected and the community valued. The SRA then assesses the results, collects evidence in support of answers and rates the restaurants accordingly.
To date, 14 restaurants have achieved the top rating – three stars – which means they've scored at least 70% in the survey of their all round sustainability. Restaurants to have attained this exceptional result include River Cottage HQ, Café Spice Namasté, London, and ODE IN DEVON WHICH, WITH 88%, GAINED THE HIGHEST SCORE SO FAR, just pipping River Cottage HQ for the highest rating to date. The SRA has awarded two stars to a further 21 restaurants and 24 have received one star.
Tim Bouget owner of Ode said: "We are delighted with our Three Star rating and to be recognised nationally for our efforts. With increasing customer awareness the SRA rating system is a great way to benchmark all hospitality businesses, big and small, and communicate how we're doing to our customers. It also encourages us all to look at our policies and procedures to make our industry more sustainable."
