ODE Nature and Scope Policy
The menu will feature and highlight organic items and dishes.
ODE Purchasing Policy
If a product normally sourced as organic was unavailable we would change the menu accordingly.
Organic produce will be purchased wherever possible from Soil Association, EU or other countries government certified supplies.
Local produce will be purchased wherever available.
Wherever possible only seasonal produce will be used.
Items that are not organic will have to be traceable to the origin and labeled accordingly such as wild caught fish.
No reared game or factory farmed poultry or fish (unless SA certified) will be purchased.
We aim to purchase and support fair trade products wherever possible.
We support local purveyors, artisans and community incentives with all aspects of our business wherever possible.
We do not buy fish from over-fished seas or environmentally damaging methods as guided by MCS (Marine Conservation Society).
No GMO foods or products will be used.
ODE Re-use and recycle policy
Wherever possible recycled products will be purchased.
Our operating equipment and sundries we purchase will have minimum negative impact to the environment.
Wherever possible we will aim to recycle packaging and bottles and compost for the kitchen garden.
Standard operating procedures within the kitchen will minimize the use of water and energy.
